Buffalo Chicken Burgers


The weather is getting chilly
and spicy foods are just the
ticket for us.  

The thought of buffalo anything
just makes my mouth water 


so when I was contacted by Ulyssees
Press to review their new cookbook - 
I had my mouth watering while waiting for it 
to arrive.




It was hard to decide what to try first
but I am a burger fan and I am a buffalo chicken
fan, so I thought I would give these a
try.

I have never made a chicken burger before.


The ground chicken has onions,
bread crumbs, Worcestershire Sauce
and Franks RedHot Wings Buffalo Sauce
added.  


Ground chicken is so soft
that I decided to use
my handy hamburger press
to form the patties and it
worked perfectly.


I grilled these up on my grill pan
in the kitchen.  They suggested 5 minutes
a side and that seemed like the right time.

Buffalo Chicken Burgers

1 lb. ground chicken
1/3 C. Franks RedHot Wings Buffalo Sauce
1/4 C. bread crumbs
2 tsp. Worcestershire Sauce
1 small onion, chopped
Salt and Pepper to taste (I added a little pepper
but didn't feel like it needed any salt.)

In a medium bowl mix all of the ingredients
together.  Form into patties.  Heat pan and
grease it or spray with Pam.

When pan is heated, cook 4-5 minutes
on each side, turning once.

Serve on good quality buns
with lettuce, tomatoes, sliced celery
and a dollop of blue cheese dressing.



 I thought the flavor of the burger
was wonderful.  It wasn't too spicy.  If 
you want more spice they do have a
Frank's Buffalo sauce that is spicy but
it is a little too much for us.

We dip almost everything in Frank's 
Buffalo sauce and the grandkids are 
addicted to it too.  



There are lots of other mouth-watering
recipes that I can't wait to try from 
appetizers to desserts.  I am thrilled

Ghoulish Buffalo Sauce Chop Bread

Beaulah wants you to know that she can't live
on sweets all month
(even though she would like to) so we sharpened
up our knives for some

bread.

If you like a little kick in your life,
this Buffalo Sauce Chop Bread



is perfect for you.



It's already looking a little Ghoulish isnt it?


Wait until Beaulah gets out her knife and has a go at it,
hacking and chopping.


Oh, Beaulah had a little too much fun with that!



Buffalo Sauce Chop Bread

Dough:

2 C. all purpose flour
1/2 tsp. salt
1 tsp. yeast
1/2 T. olive oil
7/8 C. warm water

Mix all of the above in the bowl of your standing
mixer with a dough hook for about 5 minutes.

Spray the bowl and dough with Pam and cover
with plastic wrap.  Let rise until double, about 30-40
minutes depending on how warm your room is.

Punch the dough down and stretch it out on a piece
of parchment or wax paper.  Top with 1 C. mozzarella
cheese and 2 T. Frank's Red Hot Wings Buffalo Sauce.
(This is wing sauce so it is about medium heat.)

Now the fun begins, chop it into smaller pieces with
your knife mixing in the sauce and cheese.

Grease a pan and shape the chopped bread into
a round.  Place it in the pan.  I chose to use a 10 inch
springform pan but a baking pan will do.

Heat your oven to 400 degrees.

Let the dough raise covered about 15-20 minutes.

Top with blue cheese if your guests like that.

Bake about 20 minutes.  Gently pull apart some of
the chopped bread in the center to make sure it is
cooked all the way through.

Serve with additional Ghoulish Sauce if you like and let
everyone pull off pieces to eat.

Buffalo Chicken Soup


Some foods are really trendy and popular 
and Buffalo Chicken everything is "hot" right now.
With the snow falling (yes we finally started to get it just
when I am ready for Spring!) hot soup is perfect and oh so
comforting.



This recipe comes from How Sweet It Is
and she said it is her brother's recipe,
and she calls it 30 Minute Buffalo Chicken Soup.
Yes, it goes together that fast.
You can bet this is going to go into the permanent
Purple Chocolat Home files.


Buffalo Chicken Soup

2 T. olive oil (I only used one)
1 medium onion, chopped finely
2 garlic cloves, minced
3 T. flour (she called for 1, but I wanted it thicker)
32 oz. chicken stock or broth
1/3 C. Frank's buffalo sauce (be careful not to get "hot"
unless you can really take hot!)
2 boneless, skinless chicken breasts, cooked and chopped
1/3 C. grated cheddar cheese
1/4 C. grated parmesan cheese

Toasted slices of baguette
Chunks of blue cheese or gorgonzola
Fresh cilantro or parsley

In a large saucepan heat the olive oil.  Add the onion
and saute for about 3 minutes.  Add the garlic and saute
about 1-2 minutes more. 
Add the flour and cook for 1-2 minutes.  Stir in the chicken
stock and the buffalo sauce.  Bring to a boil and cook until
thickened.

If you want a smooth soup - let's
say your kids would object to the onions - you can puree it
before you add the chicken and cheese.

Stir in the chicken and cheese and cook until the
cheese is melted.

Garnish with the bread croutons and blue or gorgonzola
cheese and the parsley or cilantro.




I have to say, I love Buffalo sauce!

(Ok, verdict - hubby and teenager loved it -
both whined a little about heat at 1/3 C. - WHIMPS!
I thought it was perfect, so adjust to taste.)

Buffalo Chicken Dip



The holidays call for parties with lots of appetizers
at Purple Chocolat Home.

This year we tried a new one that will be on the
favorite's list from now on.  We all are a little 
addicted to that savory heat of buffalo chicken wings
so when I saw a recipe for a dip
recreating those flavors in
magazine, I knew that we would be testing this
one out.
(I had never purchased this magazine before, but absolutely
loved it - of course it is all about lovely southern lady style!!!)


I did tweak the recipe just a little for convenience
and personal taste. 

Buffalo Chicken Dip Recipe

2 large cooked chicken breasts, cut into small cubes
1 tsp. onion powder
1 1/2 tsp. minced garlic
5-6 oz. blue cheese (I love Boar's Head if you can find it.
We have it at Harmon's Grocery Store.)
8 oz. cream cheese, softened
8 oz. sour cream
8 oz. shredded mozzarella cheese
1/2 C. Frank's Red Hot Wings Sauce - Buffalo
(get the regular, the hot buffalo is too hot for us)

Preheat the oven to 350.  Lightly grease an 8x8 or
medium sized casserole dish. (Mine is a beautiful new treasure
that I found while treasure hunting 
at
 Home Goods this year.)
Mix everything together in a microwave safe bowl,
reserving a little of the
blue cheese.  Place the bowl in the microwave and
heat for 1-2 minute or until everything can 
stir together nicely.
Place the mixture in the dish and bake for 20  
minutes or until the cheese mix is bubbling.
Sprinkle the remaining cheese on top and bake another
5 minutes.

Serve with toasted pita triangles as I did (just cut the
pitas and spray with Pam and toast in the oven for
about 10 minutes at 350) or with crackers, or bread
cubes.  
(The family loved this so much, they ate it after in 
tortillas.)

(The original was doubled and had you cook raw
chicken in olive oil adding fresh onion and garlic.  They 
also added additional salt and red pepper.  I chose to
use cooked chicken and omitted the salt and red pepper.)

Fabulous flavor.  Give this one a try - perfect
for New Year's or the Super bowl!
