Corn Salsa or Cowboy Caviar

A little red white and blue to celebrate the 4th of July
This would be great anytime of year.
My good friend Annette served us this tasty salsa
when we went over to her home.


What else would you start with but fresh tomatoes?
This salsa also uses canned black-eyed peas
Canned corn, but fresh off the cob would be great too.
Fresh green onions and cilantro
To store any leftover cilantro, cut off the stems and place
in a glass or jar of water in the fridge.
The dressing is Good Seasons Italian Dressing
made according to package directions.
I used apple cider vinegar, but any would work.
Red salsa, white and blue corn tortilla chips are perfect.
These blue chips were "red hot" so they had a little red in them.

Yummy Corn Salsa
(aka Cowboy Caviar

4-6 Roma tomatoes, chopped
1-15 oz. can black-eyed peas, drained
1-15 oz. can corn, drained
1 bunch green onions, chopped
1/2-1 bunch cilantro, chopped
1 envelope Good Seasons Italian Dressing Mix, made
according to directions.

Mix all ingredients together and then add the dressing.
Optional:  You can add 1-2 cubed avocados right
before serving.
I think I could live off of chips and salsa.
