Mickey Beignets


Mmmmm, our family has loved making
beignets for a long time.  They are so easy
and kid-pleasing, freshly shaken in powdered sugar
and still warm!  My mouth is already watering.


Beignets are so easy to make - not fussy like
some donuts.  

They are so easy that we have made them at
Lake Powell, and today we are making them
up at the cabin for breakfast before everyone
goes out skiing.

Of course, when it comes to frying them, little
ones have to stand back and wait patiently.


Of course, you don't have to bother with cutting
them into Mickey shapes - they are equally delicious
just cut into squares or oblongs, and actually
a lot quicker.

But we wanted to give the Mickey ones a try
since we love them at Disneyland.

Easy Beignet Recipe

1 C. water
1 C. scalded milk
1 T. yeast
3 T. sugar
1/4 C. melted butter
2 tsp. salt
5 C. flour

Mix the water and scalded milk.  Test to make sure
it isn't too hot, then stir in the yeast and let it 
sit until bubbly, about 5 minutes.  Place in
a mixer bowl with a dough hook and add the
remaining ingredients.  Let it knead for about
5 minutes.  Cover and let it rise for about an hour.

Cut the dough in half - working with only half
of the dough at a time, and keeping the other
half covered - roll out the dough into a rectangle
on a lightly floured counter.  
It should be about 3/8 inch thick.

Cut into 2.5 x 2.5 squares or any shape you want.
This red Mickey cookie cutter came from
Disneyland.  I ordered one online, but it was
so small that I waited and got the bigger
one at Disneyland.

After cutting, let rise on counter for
about 15 minutes.  Fry a few at a time in
350 oil.  Remove and drain.  Let cool for
a minute or two and then toss in a bag
with powdered sugar.  Make sure the
beignets are fully covered with sugar.

Serve while warm.

Peppermint Beignets

These are served at Disneyland during the
Christmas celebration, but why not enjoy
peppermint year round.

Mix 2 C. powdered sugar to 2/3 C. crushed
peppermint candies or candy canes.  Place
in a bag and toss warm beignets in the sugar.

Disneyland also makes Pumpkin Spice ones
for Halloween.  You could do that by adding
pumpkin spice to the powdered sugar.  Get
creative in your sugar flavorings.


A flavor explosion in your mouth!

The obvious advantage to square or oblong
beignets is that there is no re-rolling of the
dough, but it is so fun to eat Mickey's ears off.

Either way, give these easy breakfast treats a
try and they will become a family favorite.
