Creamy Baked Chicken Taquitos


This incredibly delicious and easy dish has been all over
Pinterest and I decided to give it a try.
I think the original came from Our Best Bites
and it has been a big hit whenever we have made it.

I made it last week for my 3 Kings Fiesta
and everyone wanted the recipe.



The filling is one that could be used for
other dishes.  We made it and shaped it 
into a cheese ball for a party.  It was delicious
that way too.


This recipe has the healthy side benefit of being
baked not fried and when I serve it no one can
believe it is just baked.

Creamy Baked Chicken Taquitos

1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions

2 C shredded cooked chicken
1 C grated pepperjack or Mexican blend cheese

8-10 small corn tortillas
kosher salt
cooking spray


Heat oven to 425.

 Line a baking sheet with foil and lightly 
coat with cooking spray.

Heat cream cheese in the microwave for about 

20-30 seconds so it's soft and easy to stir. 
Add green salsa, lime juice, cumin, chili powder,
 onion powder and granulated garlic. Stir to combine
 and then add cilantro and green onions. Add
 chicken and cheese and combine well.

You can prepare up to this step ahead 

of time. Just keep the mixture in the fridge. 
Spray both sides of each tortilla and heat

in a medium high frying pan until golden brown
on the first side and starting to bubble on the
second side.  Place the golden brown side
down so it ends up being the outside of the
taquitos.
Place 2-3 T of chicken mixture on the lower
 third of a tortilla, keeping it about 1/2 inch from the edges.
 Then roll it up as tight as you can.

Place seam side down on the baking sheet.

 Lay all of the taquitos on the baking sheet and
 make sure they are not touching each other.
 Spray the tops lightly with cooking spray 
 and sprinkle some kosher salt on top.

Place pan in oven and bake for20-25

 minutes or until crisp and the filling starts to bubble.


Serve with our imitation of
Cafe Rio's Tomatillo Ranch Dressing


1 packet of buttermilk ranch dressing
1 Cup mayo
1 Cup buttermilk (the smallest carton is perfect)
1 bunch of cilantro
2 tomatillos husked 
1 jalapeno (take the rib and seeds out)
Garlic powder (just a few shakes)
juice from 1 lime
First Put the mayo, dressing mix, buttermilk, and garlic in a blender 
and mix until blended all together.  Place in fridge for at least
an hour to thicken.


To keep it light I served it over a bed of
shredded romaine lettuce and topped
with a sprinkle of cheese, chopped 
tomatoes and the dressing.  Serve additional
dressing on the side.

    This looks delicious, and is one of the rare southwest recipes for which I will be able to get all the ingredients. It looks like a good dinner for a cold winter evening.

  3. Oh, My!! These look absolutely marvelous, and the dressing in that perfect pitcher is just lovely---color and texture (and taste, I'm sure, for I like ALL those ingredients).

    And THEN---I got absolutely immersed in the gorgeous red velvet cake with her twinkly shoes-to-match---what a show-stopper!
