Lounge Lizard in Cabo



To start out the summer we headed off to Cabo.  We went with friends the first half of the trip and our children were supposed to join us the second, but with new jobs that they couldn't miss, we had to go it alone the second half - oh well!

The ocean views are absolutely incredible. 

Mornings we get up and go for walks.  Half of the fun is seeing the incredible architecture as we walk through the neighborhood.  Homes flow down the hillside. 
In another life I think I would have been an architect.  I just love architecture anywhere I travel.

 

One of my favorite places to shop in Cabo is the glass factory.  My cupboards at home are filled with
their glasses.  I always bring a rolling carry-on to bring glassware home in.  My mantra is that nothing is too hard to get home!  This time I even brought an extra suitcase for my friend so that she could bring home her purchases.








It is really fun to watch them blow the glass.

There are taco shops everywhere.  You should ask the locals what the best one is.

Our favorite is a great taco shop right across the street from Costco. (Yes, they have Costco and Sam's so bring your cards.)  The name of it is Asi Y Asada, although that name is not on the front.  It is sandwiched between two other taco shops that never have anyone in them.  Go to the center one and you will find all of the people there. 

My favorite is the grilled shrimp quesadilla.  I also love the carne asada quesadilla.  When you order the quesadilla here, you get the taco with cheese inside.  If you order a taco it is the same but without cheese.  You can choose flour or corn tortillas.  I prefer their flour.  They always have a little place where you can choose your own toppings.  The pico de gallo is great, but quite spicy.


We asked our property manager Juan, to always have pico de gallo,  and fresh guacamole for guests when they arrive from the airport.  Juan makes his own and has now added ceviche which he makes from fish he catches right below the house.

He came to the house one day and taught us how to make his pico de gallo.

Juan's Pico de Gallo

8-10 finely diced roma tomatoes
1/2 white onion, finely diced
1/2 serrano chili, super finely diced
juice of small Mexican lime or 1/2 of a regular lime
1/4 bunch fresh cilantro, chopped finely
salt to taste - usually 3/4 tsp. of salt

Mix all of the ingredients together.  Adjust serrano pepper to desired heat.  Serve with chips.
I have a trick for keeping your fresh cilantro longer - cut off the ends and stand in a glass of water.  Store this in the refrigerator.  Cilantro will last 2-3 times as long when stored like this.


Our daily lunch is chips or fresh tortillas, pico de gallo, guacamole and sometimes melted Mexican cheeses served poolside.  The avocados here are so buttery and smooth and the limes have a slightly different flavor too.  I like my guacamole without anything added.  Serve the pico de gallo alongside of it and let your guests mix the two together if they want, but keep the guacamole pure avocado.


Cabo Guacamole

3-4 large ripe avocados
1 small Mexican lime per avocado or about 1/2 regular lime per avocado
garlic salt to taste


Slice the avocados in half and remove the pit.  Score the flesh of the avocado in both directions, cutting it into cubes and then use a spoon to scoop the flesh out.  Place the avocado in a bowl with a flat bottom.  Squeeze the lime juice in.  Mash the avocados with a potato masher until it is as smooth as you like it.  Add the garlic salt and mix.  Taste and adjust the lime or salt as needed.  It helps to test it with a chip as your chip may be more or less salty and will change the amount of salt you want.

  10. I came to your blog from a link at Daily Vitamin Sea. I was surprised to see the picture of the blue bowl with salsa. I have the same bowl! It was wedding gift from a Mexican friend. I didn't realized it is such a popular design. Anyway, I have a similar picture with chips on the side.
