Peppermint Chocolate Eclair Cake


I told you I have been obsessing over
Peppermint!!

I have never been this crazy about peppermint before.
I think I am dreaming of it.  It's all I want for dessert, 
paired with chocolate, of course.

I decided to take one of my most popular desserts,
and make it perfect for Christmas.

I love the layers of pink layered between chocolate.
It makes such a beautiful dessert, and the texture and
flavor is just as wonderful.



Peppermint Chocolate Eclair Cake Recipe

1 pkg. Chocolate graham crackers
2 small pkg. white chocolate instant pudding
3 C. milk
12 oz. Cool Whip
Scant 1/4 tsp. Creme de Menthe (or Peppermint) oil flavoring
Pink gel food coloring
1/2 C. semi-sweet chocolate chips
2 T. Butter
2 T. Light corn syrup
1/2 C. powdered sugar
2 T. milk

In a large bowl, mix the pudding mixes with the milk, whisking until
smooth.  Add the Creme de Menthe oil flavoring and food coloring.
Taste and adjust the flavoring if needed.  (I prefer Creme de Menthe
because Peppermint often ends up tasting like medicine.)
Then fold in the Cool Whip.

In the bottom of an 8x8 inch square pan, place chocolate
graham crackers close together, cutting pieces to completely
cover the bottom.  

Spoon half of the pudding mix on top of the graham crackers.
Top with another layer of graham crackers, and then the other
half of the pudding mix.  End with one last layer of graham 
crackers.

Cover and refrigerate overnight.

In a small bowl, microwave the chocolate chips, butter and
corn syrup for 30 seconds.  Remove and stir.  Microwave
another 30 seconds if needed, and stir until smooth.  Place
in a medium size bowl with the powdered sugar and milk.
Whisk until there are no lumps.  Spoon onto the top of
the cake, smoothing the frosting to the edge of the pan with
a knife.  Sprinkle on crushed peppermint candy.

Refrigerate until the chocolate frosting is set.  Cut with
a knife that has been run in hot water and wiped dry.

Serve 9

  1. This looks like what all the Candyland Fairies request for their birthdays, or maybe where they lie down for a comfy nap in all that sweet poufy deliciousness.

    We're having a lovely time getting ready for this most blessed season, with the boon of having FIVE of our far-aways moving within 1 1/2 hours of us before Christmas. A splendid cookie-swap party last night at a friend's house, and our own Christmas Tea set for this Sunday afternoon. Guess what charming, unexpected cupcake holders will grace the tea table, filled with luscious fudgy cake?
    I'm taking great liberties with PINK for this first Christmas with our new kitchen.

    And all the while I'm tending my own little prinkings and putterings, enjoying just the bliss of the preparations, I think of you way out there sometimes, making such splendiferous creations, thinking up the most elaborate and exquisite settings and decor and the most delightful of gatherings. What a window into a marvelous world, just for the looking and enjoying.

    I count you one of the blessings of the whole year. Thank you for all the BEAUTIFUL you bring to so many lives, just free for the peeking in.

  2. Oh my goodness...that looks like the perfect dessert for Christmas...beautiful to look at and I am sure it tastes even better! Peppermint paired with chocolate is heavenly. You do realize, your dessert posts will be packing the pounds on several of your readers, don't you?!

  7. Do you have any suggestions on how to substitute the crème de menthe oil for crème de menthe alcohol? I was thinking maybe a few tablespoons, but I'm really not sure.
