Arugula and Lime Pasta Salad


I love pasta salads all summer long
and here is a new one that is
simple that I threw together the
other day using ingredients I had.

Arugula and Lime Pasta Salad

3 C. cooked penne pasta
1/2 C. shredded carrots
1 C. fresh arugula
3/4 C.  Newman's Own Lite Lime Vinaigrette

Toss all of the ingredients together. Add more
carrots, arugula or vinaigrette as desired.

Chill.

This was so refreshing and easy.  If
you love arugula, which I do, you will love 
this easy summer pasta salad. 
If you don't you could
substitute spinach.

Chocolat - French for Chocolate. I adored chocolate from a young age when I had to sneak in the cupboard to find where my mother had hidden the Nestle's Chocolate Chips.   1. Whoever let that first pasta cool, put in some nice crisp veggies and anointed it with a little vinaigrette or dressing---they are to be remembered fondly. There's nothing like knowing there's a lovely dish of cold pasta with all sorts of flavors and textures all tossed together, cooling in the fridge for a nice Summer lunch or supper.

    I must tell you again how much we all enjoyed the FROZEN party---the photos are just works of art, and all the arranging and care-taking and perfect eye for the details, with the clever names and beautiful draperies and food---I showed it to our Sweetpea (about to be seven, and with every other small girl in the world, still singing every word of every song) and her Mama for some ideas.

    And I'll tell you, I've got some mighty fancy cupcake shoes to fill---you are the absolute master of the perfect party, and my little lookings online for supplies, and trips to Michaels and Hobby Lobby for Wilton snowflakes certainly fade into obscurity beside all those scrumptious appointments of your own.

    Ours will be very simple, with a few of your refreshments and their charming title-cards, and we'll have some games and a piñata. I cannot imagine how you got all those perfect decorations and refreshments together like that---you've set the Grandma bar WAY above us all, and I'm certainly enjoying the quest for the possibles for our own.

    I salute you for achieving such perfection for your sweet young ladies---the love simply shines through. In a wonderful old Southern phrase, "Girl, you DO beat ALL!"
