Raspberry Lime Spring Salad


A gorgeous and delicious Spring salad featuring fresh
raspberries, spring mix lettuce, grilled chicken breast and
macadamia nuts is on the menu tonight.

This main dish salad is going to qualify for both low
carb and low fat. 


Are you old enough to remember the boring salads we used
to have using only iceberg lettuce and bottled Thousand Island,
French and Catalina Island dressings?  

We had never heard of fruit, nuts and meat in salads.

I am so glad times have changed.  My
family loves main dish salads.



I am featuring my these great bottled dressings, again,
both "light" and this time we are going to mix them
together to make an entirely new raspberry-lime dressing.


If you are having trouble finding these dressings like
some of my friends, I have found mine at Target.

Raspberry Lime Spring Salad

Marinate 1 chicken breast per serving in a ziploc bag
with enough Paul Newman's Light Lime dressing to be
able to coat the chicken breast.  Marinate for at least
half an hour. 

Grill the chicken until cooked through.  Be sure to not
overcook it until it is dry.  Discard any leftover marinade.


Mix 1/2 C. Paul Newman's Light Lime Dressing
with 1/2 C. Paul Newman's Light Raspberry Walnut
Dressing.  Toss spring mix lettuce with the dressing.
Place dressed lettuce on the plates, then top with
sliced grilled chicken breast, fresh raspberries and
macadamia nuts.  (You could substitute another nut
if you liked.)

Pass with additional dressing.


It doesn't get much lighter and fresher than 
this delectable salad.

  1. It does look light and lovely! I've had several friends say they don't care for the Newman "Lite" dressings. Do you like them as well as the regular ones?

  2. I love Paul Newman salad dressings, and the fact that proceeds from the sales goes to charity is a wonderful thing. I always marinate my chicken for the grill with his original dressing, I will be sure to try the light variety. Your salad is as pretty as a picture! Looks delicious. xo,

  5. YUM!! When this cold drizle stops & things warm up again I'm going to try this. THANKS for sharing. Tonight for me... some warm chili(from the freezer/don't you love not having to cook just heat & serve). Hmm now I have to choose cornbread or fritos to put with it. Have a great week.

  6. I need low carb and low fat after the all of the Easter and birthday treats we've had! This sounds perfect to me. I also love Newman's Own dressings. I have tried the Lime or Raspberry Walnut yet but the Light Balsamic is a favorite here. Adding to my shopping list :)

  18. My husband still prefers iceburg lettuce and 1000 Island dressing. This looks perfect for me. My daughter is here this week and we are having a spa week of mostly healthy eating, exercise and planning for a bit of weight loss. Our salad tonight had baby greens, goat cheese, toasted walnuts and strawberries with a good quality balsamic vinegar drizzled on top. My husband wouldn't eat it.

    I haven't seen this lime dressing...I will look for it.

  21. I love the final touch with raspberry and macadamia nuts. Although I think I'd be tempted to break down the nuts in tiny pieces. Just my preference ;)

    Oh, I haven't been here for so long! I missed you! I'm trying to not spend as much time online. I'm not sure if you know, but I'm pregnant (10 weeks) and I'm feeling a bit too tired and nauseous to stay in front of the computer for too long. But I missed you!!! :-)

I must tell you this is a great salad /main course meal ....In the summer it is so nice to make salads of all sorts ....I usually add mandarin oranges , pecans , thinly sliced onions and some hot peppers tossed in with grilled or pan fried chicken then i make a honey and apple cider vinegrette .... Mmm Mmm Good and healthy too .... Enjoy your evening
