Pumpkin Truffles

Delicious, smooth chocolate ganache with a
hint of pumpkin and spice - that describes
these fun pumpkin truffles.


Shaped to look like pumpkins and enrobed in marzipan


Or left uncovered and rolled in cocoa powder or
chopped nuts.


Pumpkin truffles have been a tradition for years at
Purple Chocolate Home.  This is another recipe
that Joni and I have made together.

They are super easy to make and even more fun to
let melt in your mouth.



(These were placed on a chocolate cake with cocoa
and nut covered truffles on the side.)

Pumpkin Truffle Recipe

2 C. semi-sweet chocolate chips
1/3 C. pumpkin puree
4 oz. cream cheese
1 C. powdered sugar
1 tsp. pumpkin pie spice

7 oz. marzipan (find it in baking aisle)
paste food coloring

Melt the chocolate chips for 1 minute in the microwave,
stir and melt for an additional 20 seconds.  Stir again.
Chocolate is easy to melt in the microwave as long as
you use a microwave safe bowl and stir after the first
minute and then every 30 seconds after. 



Whisk in the remaining ingredients. 



 Spoon into an 8x8
inch pan lined with parchment paper.  Refrigerate until firm.
Using a little flour on your hands, roll into 3/4 inch balls.



Color 3/4 of the tube of marzipan
with orange paste food coloring and 1/4 with green
paste food coloring.  Flour your hands a little and using
about a 1 inch ball, flatten the marzipan and place the
 truffle in center.
Bring edges up and pinch together, smoothing the
marzipan.  Fill in with a little piece at the bottom if
needed.  Keep the balls in fridge if necessary so
the chocolate doesn't get too soft.
Use a toothpick to create lines on outside of pumpkin. 
 Roll out a small bit of green to form stem.  Attach with a little
water.  Dust with powdered sugar if desired.
 Cover and refrigerate to store since the truffles
have cream cheese in them.

This amount of marzipan will cover 12 - 15 truffles.
The chocolate recipe makes about 36 truffles.  If
desired, roll remaining truffles in cocoa powder or chopped
nuts as soon as you roll the balls so the coatings will stick.
