Strawberry Coconut Ice Cream


Homemade ice cream reminds me of summer.  We are always trying some new recipe.
I am suprised we don't put on a ton of weight each summer with all of the cream we consume!


I have tried out many ice cream makers, but the ones with the frozen canisters were just too small for our family.  Not anymore!  I bought this Cuisinart which makes 2 quarts two summers ago.
 
Not only do I like how much it makes, but I like how firm it can make the ice cream.
I had a Krups years ago that made it firm, but my sweetheart threw the freezer container away!  What was he thinking?  Then I tried the Cuisinart that makes 1 1/2 quarts, but it never got the ice cream much beyond slush stage.  This one, with it's larger freezer container and thicker walls seems to get the ice cream the hardest. 
Of course we have the traditional ice cream maker using ice cubes and salt, which we use when we need a really big batch, but this one is oh so convenient.


This is a shot of it right before I popped it in the freezer to harden it even more.  See how thick it is.  One thing I hate about home made ice cream is when it turns to soup as you eat it.  So I like to freeze it some more or as they say, "let it ripen".

Strawberry Coconut Ice Cream

4 C. whole fresh strawberries
1-15 oz. can of cream of coconut
1/2 C. sugar
2 C. heavy whipping cream
1 tsp. cornstarch (helps it hold its shape)

Place the strawberries in a food processor and puree them.  Blend in the sugar and cream of coconut.  Stir in the cream and the cornstarch. 
Pour into the freezer while moving if using one that has a frozen container.




If you are using a large ice cream maker using ice and salt you can double this batch.  Just follow the manufacturer's directions.  One trick I learned when using the ice and salt is to add 8 parts ice to 1 part salt.  For my freezer, I put in 4 C. ice to 1/2 C. salt.  I buy my ice as my cubes are too large, and I use the large grained salt made for ice cream.  When I actually measure out the ice and salt, I never have problems with it freezing too quickly or too slowly.


We had this batch for Sunday dinner with the family with a Cream Cheese Pound Cake.  I will include the recipe for the pound cake in a future post.  We serve it with sliced sweetened strawberries.  Yum!  Can summer be any sweeter?

  1. This recipe looks yummy! We too have been trying new ice cream recipes. We just have a small frozen canister (Krups), but it serves as portion control..LOL! Joni

  12. oh corn starch! i never thought of that! do you use that in a lot of your ice cream recipes? i'd love some tips! i'm new to ice cream making and i'm having a lot of trouble. i've realized there's a lot of trial and error in ice cream making! i've gone in to the world of frozen yogurt and that just adds even more to it all!! any help i'd love to hear it!!
